Hint of Lemon Cookies

Ingredients:

1 Cup Softened Butter (Salted Sweet Cream Butter)

2 Cups Granulated Sugar (Normal Baking Sugar)

4 Large Eggs

4 Tablespoons Lemon Juice

4 Tablespoons Lemon Zest

4 Teaspoons Baking Powder

4 ½ Cups All-Purpose Flour

Any color of food coloring (You can have multiple colors)

½ a Cup of Powdered Sugar

 

Steps/Instructions:

Step 1: Add sugar and softened butter to the mixing bowl and mix until fully combined.

Step 2: Add the eggs and mix until light and fluffy. This should take about 2 minutes.

Step 3: Use a cheese grater to prepare your lemon zest. Rub the peel of the lemon against the grater to get the lemon zest.

Step 4: Cut your lemon in half and then squeeze the lemon by hand or with a juicer to get lemon juice.

Step 5: Add your lemon juice and zest. Mix until thoroughly combined.

Step 6: Add the baking powder and mix.

Step 7: Slowly add in the flour while mixing at a low speed.

Step 8: Split dough into how many colors you have. (ex. 4 colors, four portions)

Step 9: Color the dough with food coloring and then mix the color into dough. Start with 1-2 drops and add more as needed.

Step 10: Refrigerate dough for two hours.

Step 11: Preheat oven to 350 degrees.

Step 12: Roll dough into small balls and roll in a bowl of powdered sugar. 

Step 13: Put on a large cookie sheet and bake at 350 degrees for 8-10 minutes or until thoroughly cooked.

 

Tips:

-If the dough is sticky, put flour on the counter

-Add food coloring slowly, start with 1-2 drops and add more

-If you want to make the cookies in a short amount of time and don’t want to wait for the butter to soften, put the butter in the microwave for a bit. Your microwave might even have a butter soften button!
